BARUT BREWING AND BLENDING
Aleš, Luka and Miha met in the laboratory for yeast biotechnology, where they conducted research with various yeasts. Aleš completed a master's degree in brewer's yeast, Luka received his doctorate with the help of wild yeasts in wine, and Miha received his doctorate in the genetics of pathogenic yeasts.
Today, they are most fascinated by yeasts of the Brettanomyces species, as they bring something new and potent to fermentation.
During the brewing of beer in the garage, they tried and learned many things, including the fact that the water in Kamnik is phenomenal.
While searching for a location in Kamnik, they came across an abandoned zone of a former powder magazine. Today, the facility is almost a fully functional laboratory of mixed fermentations with stainless steel and oak barrels.
